How to make the perfect fish and chips at home

Fish and chips are about as much of a British staple food as the good old Victoria sponge. However, they are also a dish where much can go wrong, as anyone who has ever fought their way through greasy fried fish and raw-in-the-middle chips will confirm. If you want to make sure you get this dish right then here are a few handy hints for how to make sure your fish and chips are spot on.

Pick your fish carefully – you should make an effort to buy the best fish that you can afford. Swathing everything in batter and then ketchup is all very well but a quality piece of fish can really make this dish so it’s worth investing in if you want to get it right. Opt for the freshest fish you can get your hands on and make sure that it has some eco credentials and comes from a sustainable source.

Make a proper batter – because this is the part of a fish and chip dish that will either make it or break it. Beer is a popular choice as an ingredient to add into fish and chip batter but it’s a good idea to choose a pale one or the batter is most likely to come out look burned. It’s important to use vegetable oil rather than lard to fry your fish and keep the batter extremely cold for as long as possible before using it.

Cook it properly – do not leave your fish frying and just walk out of the room as this is a recipe for disaster both in terms of ending up with a cremated dinner and setting your house on fire…Make sure your oil is nice and hot before the fish goes in, as the fish will cook more quickly this way and so absorb less oil and end up being less greasy. If you don’t want to use a chip pan or deep fat fryer then go for baking as a method of cooking the fish, or pan-frying.

Do proper chips! – because there’s nothing like home made chips to making you feel like you’re getting a treat. Beef dripping will give you really tasty and attractive chips but if you don’t want to cook them in a fryer you can very easily oven bake the chips instead. You will need a potato like the King Edward for excellent chips, as it is a dry potato that has a floury texture. Try and make sure your chips are all the same size so that they will cook at the same rate when you put them in the oil. You can double cook them by frying them off until golden the day before you want to eat them, leaving them in the fridge overnight and then frying once more the next day before you eat them.

Opt for a healthier alternative if you need to – because you can still enjoy great fish and chips without having a guilty conscience. Go for baking instead of frying, spring water in your batter instead of beer, a tempura batter instead of a fatty batter, and a thinner cut of fish to stop it absorbing too much cooking fat.

However you choose to make your fish and chips, if you follow these few helpful tips then you’ve got a great chance of making the perfect fish supper every time. Throw in a few mushy peas and some tartar sauce and you’ve got a heartwarming dish that will lift spirits, fill bellies and get you a great reputation as a top class fish fryer!

Replacing Beef with Turkey

It’s cheap, easy to cook and a healthy replacement for other meats such as lamb or pork. However, turkey often gets a bad press dues to its perceived lack of flavor and tendency to dry out. Here are a couple of tips to avoid both these issues, which will suit both the organized and spontaneous (i.e. drunken) cooks out there.  

Marinated turkey

One of the easiest ways to imbue turkey with a whole new layer of flavor and taste is to marinate it in advance. Marinades for turkey can include ingredients such as wine (a popular one), lemon juice, vinegar, herbs and spices.

A quick easy way to marinate is to make random holes with a fork, then place the turkey in a cooking bag, pouring in the pre-prepared marinade over the top. You should make sure the bag is securely closed, then leave it overnight in the refrigerator.

Then, the next day all you have to do is scrape off any excess marinade and cook the turkey as normal. As turkey recipes go this is extremely straight forward, and yet it enhances the flavour a huge amount.

An important safety tip though- do NOT reuse the marinade to baste the turkey. That way food poisoning awaits.

Turkey kebabs

Of course, there’s also the crucial time when you’ve come home from the pub and desperately need something to eat in a vain attempt to stave off the morning’s hangover. Being drunk, there will of course be only one thing you crave, a good old fashioned kebab. Only the truly well-prepared will have marinated in advance.

So, here’s what you do. Mix together 2bsp of olive oil and ketchup, and a tablespoon of white wine vinegar, black treacle and Dijon mustard. Skewer 1lb of diced turkey thighs, alternating chicken with red pepper and red onion. Then brush the skewers with the ketchup/mustard mix you’ve already prepared.

Grill for eight to ten minutes, turning regularly, then serve in warmed up pitta breads.

Scoff right now, trying not to get the marinade all over yourself, and congratulate yourself on what a great cook you are, even after a few pints.

There’s a common myth that turkey will make you sleepy. There is some scientific backing for this theory. Turkey contains a chemical called tryptophan, which is related to the production of serotonin in the human brain, which helps us sleep. The story makes a lot of sense. After all, when you’ve tried your mum’s roast turkey at Christmas dinner, you do always feel very sleepy.

However, in actual fact turkey recipes don’t contain any more tryptophan than any other meat dish. In fact you’ll find more tryptophan in cheddar cheese (No word on whether that’s why you have all those freaky dreams if you eat too much of it).

So turkey is totally innocent when it comes to it’s attempts to tranquilize you. The real, scientifically approved reason why you’re tired after Christmas dinner is because it’s a meal with a lot carbohydrates in, like roast potatoes. Also, all that booze you drank. Again.

Gluten Free English Muffin Pizzas

When I was a kid, my mom used to make the best mini pizzas. I did not know how she did it but I loved them! Eventually I figured out her method and made them for myself as an adult and now I make them for my family. These are so easy to make and getting the kids involved is such a great thing to do. These days due to my health I am Gluten Free for the most part…(I do slip up).

 

I found these great gluten free English muffins made by Food For Life. They taste great and work really well for these little pizzas. You can add whatever toppings you want, which is fun for kids. I usually have small bowls with topping choices for them to choose from. Below is the recipe for plain cheese, but feel free to add pepperoni, mushrooms, olives, peppers, spinach, sausage, tomatoes, onions, ham, pineapple, and the options go on and on.

 

6 English muffins, split in half

2 cups Mozzarella cheese

1 1/2 cups pizza sauce

4 Tsp Italian seasonings

 

On a cookie sheet place muffins on sheet. use foil for easy clean up! Next spread the sauce onto the muffins. Next add your desired amount of cheese and finish with Italian seasonings on top. Then you can add whatever toppings you may want. Plain cheese is GREAT too!

Bake at 350F for 10-12 min. Crust should be a bit crunchy, and cheese a light golden brown. (or just bubbly if you are like my husband and considers brown black)

A Guide to Cooking Frozen Crab Legs

Crab legs are harvested in the chilly water areas around Alaska. They are well known for their meaty insides and succulent tastes. When crabs are caught, they are cooked momentarily on the crab boats then frozen to lock in their flavor. This is mainly because they have already been cooked and then frozen. As a result, frozen crab legs only need added flavor, marinades and a few minutes over a fire to be cooked.

How to Cook Frozen Crab Legs

Boiling

You Will Need

  • Sauce Pan
  • Water
  • Salt
  • Crab Legs (thawed)

Instructions

  1. Fill a saucepan with water
  2. Add salt
  3. Allow water to come to a boil
  4. Add crab legs
  5. Let boil for 10 minutes
  6. Remove water and rinse crab legs
  7. Serve

Baking

You Will Need

  • Crab Legs (thawed)
  • Baking Tray
  • Butter
  • Lemon Juice
  • Seasoning (seafood)

Instructions

  1. Preheat oven to 375 F.
  2. Grease baking tray and place crab legs on top
  3. Spread lemon juice, butter and seasoning on each leg
  4. Place inside the oven and bake for 15 minutes
  5. Serve and enjoy

Steaming

You Will Need

  • Water
  • Steamer
  • Pot
  • Salt
  • Lemon

Instructions

  1. Put the steamer in a pot and on the fire.
  2. Pour 3 cups of water inside pot.
  3. Wait for it to begin boiling
  4. Put in crab legs
  5. After 10 minutes extract crab legs
  6. Serve with lemon

These are just a few of the most common ways frozen crab legs are prepared. Each process takes no more than 15 minutes and in no time you will be dining on a delicious and succulent crab leg.

Tip: The shell around the meat of a crab leg is too hard to break with your fingers or teeth. Many grocers sell pliers that can be used to crack the shell of the crab. Some people also use hammers, nutcrackers and other similar objects in order to break the crab’s thick outer shell.

Crab meat is a very tasty delicacy which should be experienced at least once in life. Although it is a rare find there are several grocers that sell crab meat at discounted prices. Some persons also go out and hunt crabs themselves at nearby beaches.

Seamless Food Delivery App

Seamless is another application download for the iPhone that is used for food delivery; it is similar to the GrubHub app. The Seamless app allows its users to search for restaurants in their area; they also provide a list of restaurants from A to Z in the customer’s area.

This app also provides the estimated delivery time and the minimum order amount for each restaurant. There is also an advanced search that customers can use that allows them to choose the minimum order amount, estimated delivery time, and the type of cuisine or food item they wish to order and it will filter the results in their area that match what they searched for.

Another useful feature that comes with this app is “The Usual” section that they recently added to their mobile application. This section provides the customer with their recent, past, and favorite orders. This application is also free for download.
